I might be wrong here, but once he really starts to get it, you might try cutting back on the food rewards. He gets pretty Jazzed up for the reward, and that state of mind can be counterproductive as you are pushing for longer duration. Once he starts settling in with the command, I would give nice calm praise instead of food.

If he is able to stay calm and stable while getting a food reward, then that is fine, but if you find he is not resting into the stay then you might experiment with my above suggestion.
